The holiday dishes include Nantucket Bay scallop tempura with a mango-red-pepper chutney, micro cilantro and peanut oil; baked halibut with baby artichokes, gnocchi romaine, pomme maxime chips and a shallot-red-wine sauce; beef tenderloin Rossini with potato galette, Perigord black truffle and cabernet sauce; and sides like wild mushroom manicotti crepes and a winter vegetable casserole.

Chef Ron Eyester will present the Feast of the Seven Fishes on Dec. 24 at Rosebud in Morningside. The meal will be served in honor of a Southern Italian tradition that includes a meal of seven to nine fish dishes from the region. Of course, the meal at Rosebud will also reflect Southern influences.
The menu includes starters like shrimp bisque with coconut milk and red curry and. seared ahi tuna plank with cracked olives, potatoes and arugula pesto. Entrees include a Texas redfish with lobster and cream fraiche grits and stewed San Marzano tomatoes and Nantucket Cape scallop risotto with toasted pistachios, pearl onions and fennel.
